Our traditional fork-buffet is made using the freshest ingredients and is delivered to your home or party venue dressed and ready to go. We’ll help with the presentation, provide the trays and napkins and cutlery and all you to do is get ready to enjoy great food.

Selection to include

Platters of freshly sliced slow roasted beef, glazed roast ham and apple roast pork.

Selection of homemade stuffings, homemade apple sauce and mild mustard.

Spring pesto dressed pasta with courgettes, mange-tout and sweet garden peas.

Pesto and fresh rocket new potato salad with spring onions, mixed fresh herbs and crème fraiche.

Mixed dressed salad with fresh herbed croutons.

Creamy homemade coleslaw.

 Cheese board selection served with crackers chutney, pickles, grapes, celery sticks.

A Selection of freshly baked breads to include french baguettes, milk rolls, fresh ciabatta and herb flat breads.

As the name suggests Eton Mess is a bit messy. We use the Nigella version with pomegranate juice and if you happen to passing some, raspberries work really well.

As for the whens and the wheres, there’s nothing to tell except that to reduce the chances of you sporting a rather unfortunate whipped cream and strawberry moustache can we suggest serving in canape glasses …. with a very small spoon !

Our Recipes: Authentic BBQ Pulled Pork

At Baytree we use this recipe as often as we can though why Pulled Pork is such a little known dish is really beyond me.

In the BBQ and Creole regions of the US the dish is used by everyone from keen cooks to professional BBQ chefs and everyone seems to have their own particular recipe.

Whichever you use, the real key to this dish is time, at 5 hours in the oven it’s perfect for a lazy Sunday and will quite literally feed an army by the time you get it to the table.

If you buy your pork shoulder as early as you can and do the brining in the morning the day before you cook, you’ll really notice the difference when it comes to the moistness of the meat. Add the spice mix in the evening and cook the joint the next day.

Although this recipe does take time it’s nearly impossible to spoil providing you use a real unboned shoulder of pork and no matter how good the soft, smokey aroma that will overwhelm your kitchen, try not to open the oven too soon !!
